More 30 Minute Meals with Captain Marden’s Seafood

No time to cook? There are lots of delicious, locally produced 30-minute meal options in Chip-in Farm Store’s freezer case.

 

Captain Marden’s has been a Wellesley treasure for almost 80 years. Elected to the Massachusetts Hospitality Hall of Fame in 2012, it was founded on the premise of delivering the best, highest quality seafood to customers in their restaurant, at their food truck, and via fresh-frozen entrees, soups and chowders that are available here at Chip-in Farm.

 

We stock over 11 varieties of Captain Marden’s seafood entrees, soups, and chowders. Though options vary depending on supply, you are sure to find something that appeals to you. Here is a list of what you might find in our freezer:

 

Seafood Entrees

 

  • Haddock au Gratin – a tender haddock fillet in a creamy cheddar cheese sauce, topped with the Captain’s signature seasoned cracker crumbs.
  • Scrod Pomodoro – tender scrod fillet in a light tomato sauce with diced green peppers, onions, celery, and mushrooms.
  • Haddock with Herb Dressing – a tender haddock fillet topped with savory herb stuffing.
  • Scrod Supreme – tender scrod filet in a velvety cream sauce topped with the Captain’s signature seasoned cracker crumbs.
  • Captain’s Special – a tasty combination of poached scrod and crab with mushrooms and green pepper topped with corn flakes.
  • Baked Scallops and Mushrooms – tender, sweet sea scallops and mushrooms in a lightly seasoned sauce.
  • Scrod Parmesan – tender scrod fillet in a hearty Italian red sauce topped with fresh mozzarella and Parmesan cheese.
  • Crab and Shrimp Medley – A casserole of New England crab and shrimp with rice, peas, red and green peppers – topped with the Captain’s signature cracker crumbs.

 

Soups and Chowders

To make a fast and delicious meal, combine a seafood entrée with a container of soup or chowder and a fresh side salad.

Lacinato Kale Salad

Serves 4

 

Total time: 10 minutes

 

Ingredients

  • 1 bunch of Lacinato kale, de-stemmed and chopped.
  • 1/2 head of purple cabbage, finely shredded
  • 1/4 cup sliced almonds.
  • 1/4 cup shredded Parmesan cheese

For the dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon honey
  • Pinch of salt

 

Instructions

  1. For the dressing, simply whisk together the olive oil, lemon juice, honey, and salt
  2. Add the de-stemmed kale and cabbage to a large bowl
  3. Drizzle with dressing and massage the dressing into the kale and cabbage
  4. Add the almonds and Parmesan cheese and toss until combined
  5. Add salt to taste, if needed

 

Greek Cucumber and Tomato Salad

Serves 4

 

Total time: 10 minutes

 

Ingredients

  • 2 large cucumbers, sliced lengthwise, then into half moons
  • 1 pint cherry tomatoes
  • 1/4 small red onion, thinly sliced
  • 3 oz feta cheese, crumbled
  • 3 tbsp olive oil
  • 1/4 teaspoon dried oregano
  • Dash of Salt & Pepper

 

Instructions

  1. Combine the cucumber, tomato, and red onion in a large bowl.
  2. Sprinkle with feta and drizzle with olive oil. Top with oregano, salt, and pepper.
  3. Mix gently until completely combined. Add additional salt to taste.
  4. Keep refrigerated until ready to serve.

 

Use the time you’ve saved to get outside! Go for a walk, ride a bike, or just sit in your yard and enjoy the smells, sights, and sounds of spring!
