Serves 4

Ingredients:

  • 1 lb. of your favorite Deano’s Slow-Dried Pasta such as Fioretti
  • 8 oz. Deano’s Basil Pesto Sauce
  • 8 oz. shredded mozzarella cheese
  • 1 pint cherry tomatoes
  • 3-4 cups of water
  • Optional: Ingredients for a tossed salad

Instructions:

  1. Pour the dried pasta into a 12” pan and cover with water. Bring the water to a boil, then reduce heat to medium- high to maintain a healthy simmer.
  2. While the pasta is cooking, cut the cherry tomatoes in half and make the tossed salad. Make sure to keep your eye on the pasta, stirring occasionally and adding water to cover as needed.
  3. Cook the pasta 10 – 15 minutes, until it’s al dente. There should be about ½” of water left in the pan. Drain any excess into the sink.
  4. Reduce heat to and stir in the pesto. Add a few spoonfuls at a time to taste. Any leftovers can be frozen.
  5. Stir in the shredded mozzarella cheese and fold in the tomatoes, blend and serve.
