January is special time at Chip-in Farm, as our ethically raised lamb is available for a limited time, while supply lasts. Lamb is a rich source of high-quality protein, iron, zinc and vitamin B12 and has a tender and buttery quality.

Easy Lamb Kebabs
Serves 4
Total time 30 minutes
Ingredients:
- 2 ea. Bell peppers, any color
- 1 ea. large onion
- 2 garlic cloves
- Salt
- 1 tsp dried oregano
- 3 Tbsp. olive oil
- 1 package (1 – 1.5 lbs.) lamb kebab meat
- Metal skewers (Note: if wood skewers are used, soak in water for 30 minutes to prevent burning)
Instructions:
- Preheat oven to 400 degrees F.
- Cut peppers in half, remove seeds and cut into chunks.
- Peel onion and cut into chunks.
- In a medium-size bowl crush garlic cloves and combine with oregano and a pinch of salt, then mix in the olive oil.
- Add the lamb pieces to the bowl and coat with the marinade.
- Thread the skewers, alternating pepper, lamb and onion.
- Place skewers in a cast iron pan or on a metal baking sheet and roast for 8 – 12 minutes, to an internal temperature of 145 degrees F.
Serve with a cucumber salad, rice and Cedar’s tzatiki for a fast, family-friendly meal.
